Muddle a handful of raspberries (or strawberries) in with the mint and lime.
Why you are pouring this tonight
This is the drink I make when someone arrives at a summer party with a punnet of raspberries that have started to fight back. You know the ones. The supermarket clamshell from Coles that has been in the car for forty minutes and is now a shade closer to jam than fruit. Do not throw them out. Muddle them with the mint and lime in the bottom of a tall glass, like you’re settling an old grudge.
The drink turns soft pink, the raspberries take the edge off the rum, and the whole thing arrives at the table looking like it was made on purpose by someone who plans things. White rum, lime juice, a teaspoon of caster, a heap of fresh mint, the punished raspberries, and soda water on top. Strawberries work if the raspberries did not survive the drive home. Blackberries work if you are showing off. The Mojito does not care. The Mojito wants to be at the party and is not interested in your sourcing politics.

6-8 fresh raspberries (or 2 strawberries, quartered) muddled with the mint.

Light summer food: grilled chicken, tomato salads, soft cheeses.

- In a highball glass, muddle mint, raspberries, lime juice and syrup.
- Fill with crushed ice. Add rum, stir.
- Top with soda. Garnish with extra mint and a raspberry.
