Why you are pouring this tonight

The Mediterranean G&T is the Spanish balloon-glass gin and tonic. Heavy hand on the gin, premium Mediterranean tonic with rosemary and thyme, a fat slice of pink grapefruit, an olive, a sprig of rosemary slapped between your hands first. The drink that taught Australia how to take G&Ts seriously, by way of a 2011 Sydney bar trend that came in via San Sebastian.

Use Fever-Tree Mediterranean Tonic (the one with rosemary and thyme listed on the bottle). Use a juniper-forward dry gin (Tanqueray, Beefeater, Four Pillars Rare Dry). The pink grapefruit slice is the entire garnish; skip the lime wheel and the lemon wheel and any other citrus. A Castelvetrano olive on a stick if you want to take the piss. Big balloon copa glass, full of ice. Pair with anchovies on toast, jamón Ibérico, manchego.

What changes from the Gin and Tonic

Savoury garnish: rosemary, olives, orange peel. Works with any dry gin but sings with Four Pillars Olive Leaf Gin.

What to pour it alongside

Grilled octopus, feta and watermelon, lamb kofta.

Ingredients
  

  • 60 ml Four Pillars Olive Leaf Gin or similar
  • 200 ml Mediterranean tonic water
  • 1 sprig fresh rosemary
  • 2 green olives (Sicilian or Castelvetrano)
  • 1 strip orange peel

  1. Fill a balloon glass with large ice cubes.
  2. Add gin, then top with tonic.
  3. Drop in rosemary, olives, orange peel. Stir once.
