Dal Zotto Pucino is the bottle that taught Australia that Prosecco could be serious. Slightly finer bubbles than Brown Brothers, a touch more citrus, and a longer, drier finish that makes it as comfortable next to a plate of salumi as it is in a Spritz. The Dal Zotto family planted the first commercial glera in the King Valley and more or less kicked off the Australian Prosecco story. At $25 it is a legitimate upgrade over the Brown Brothers version, especially if you are pouring it on its own rather than into a balloon with Aperol.

What it pairs with

Aperol Spritz, Hugo Spritz, French 75, a coupe before dinner, or alongside a platter of finger food at a party. Food: antipasti, thinly sliced bresaola, fresh burrata with peaches, a good zucchini frittata, seafood pasta, or a whole-fish BBQ situation in summer. Its drier edge makes it more food-friendly than most Prosecco. Also makes a very respectable Bellini if you have a jar of white-peach puree handy.

About the producer

Dal Zotto was founded in 1987 by Otto and Elena Dal Zotto, who emigrated to the King Valley from the Veneto in the 1960s. The Pucino (Friulian dialect for “small bird”) was named after the vineyard and is the wine that defined King Valley Prosecco for two decades.
