Why you are pouring this tonight
The Amaretto Sour is the cocktail bar’s secret-Sunday-afternoon drink. Amaretto, lemon, simple syrup, egg white. Boozy in a soft way, sour in a clean way. The cocktail that gets ordered at the end of a date that has gone surprisingly well, because nobody wants the night to end in something serious.
The egg white is non-negotiable. Use Disaronno (the original Italian amaretto, which has the right almond character). Dry shake hard for fifteen seconds first to build the foam, then wet shake with ice for another twelve. Double-strain into a chilled coupe. Three drops of Angostura on the foam at the end to draw a line. Pair with a chocolate dessert, the back end of a long meal, somebody you are about to learn something specific about.
What changes from the Whisky Sour
Amaretto becomes the base; bourbon is a 15ml supporter. No sugar needed.
What to pour it alongside
Tiramisu, almond biscotti, a cheese plate with fig.

- Double-strain over fresh ice in a rocks glass.
- Angostura bitters dashed on the foam; drag a toothpick through for pattern.
